Preparation
Decoction
- Start with fully immersing tamarind in hot water along with sugar for 10 mins
- Once soft, squeeze the tamarind well
- Pass this through a strainer and collect the pulp in a bowl
- Rim a highball glass with lemon, salt and red chilli powder
- In this glass, add 30 ml of tamarind paste and 4 cubes of ice
- Pour coffee decoction over ice
- Layer with tonic
- Enjoy chilled
